WINEMAKER’S NOTE 

For the Alchemist we start with a traditional mead ferment using honey from our own hives and champagne yeast. This fermentation finishes bone dry. We then back blend with Manuka Honey, fine barrel aged Midwest USA Bourbon and our own spice infusion using ancient medicinal herbs and spices from around the world and NZ ………before resting on French Oak

She’s a heady brew and will warm the cockles of any heart.

On the Rocks as an aperitif in Summer- glorious, from a brandy glass after a meal in Winter- Perfect.
